  1. Hi Laura, I just wanted to thank you for your recipes. I've been making many kinds of pasta and other treats for my family recently. My wife works nights and I end up taking care of my daughter during the day, so I've started to take on cooking.

    Anyway, I was wondering if this would work well as a rum raisin ice cream? Instead of cream cheese and vanilla, use rum extract for flavor, let it sit for an hour and mix in the raisins? I don't really want to use actual rum, since I'm giving this to my 2 year old and my my wife and I rarely drink so I can't really validate buying an entire bottle of rum. πŸ˜‰ The only problem I see is that most people seem to suggest cooking the raisin's in the rum. I wonder if there would be another way to accomplish this?

    Anyway, we loved this recipe and my wife is wanting more but in different flavors. πŸ™‚ She usually doesn't care for ice cream, so this was considered a major hit with them.

  2. It does look great, but. I see you have lumps of cream and your mixture are a little on the runny side. I will advise you to whip the cream to almost ready, then pour the sweetened condensed milk with flavoring over the cream, and whip it up all together. There is no need to fold those two ingredients together.

    I am no expert, have only made that sort of ice cream two times. But the cream will whip up again with the condensed milk, maybe not until very stiff, but to a thicker consistency than you have here. It will not separate either, if you don't overwhip. Because the cream gets runny as soon as the condensed milk is added, it can handle a lot more whipping than it otherwise would.

    I just learned to do it this way (from Gemma Stafford on Youtube). And I see that those who fold the ingredients together have a way more runny and lumpy ice cream base than those who whip it up again until creamy and airy. And some mix everything together in a bowl and whip it all up in one operation. That seems to work as well, but I have not dared to try.

    Thank you for the recipe for a cheese cake ice cream! That flavor combination must be great, and I will definately give it a try.
