Giada De Laurentiis Makes Orecchiette Pasta with Almond Pesto | Food Network

Orecchiette with Almond Pesto
Level: Easy

Yield: 6 to 8 servings


Kosher salt
1 bunch broccoli rabe, cut into 1-inch pieces
1/2 cup roasted unsalted almonds
2 cups packed fresh basil leaves
3/4 cup extra-virgin olive oil
1 cup freshly grated Parmigiano-Reggiano
1 pound fresh mozzarella cheese, cut into 1/3-inch dice
1 pound orecchiette pasta


Bring a large pot of water to a boil over high heat. Season well with salt. Add the broccoli rabe to the water and simmer until the stem is just tender when pierced with a knife, 2 to 3 minutes. Remove to a rimmed baking sheet to cool slightly. When cool enough to handle, squeeze out any extra water with a clean kitchen towel or paper towels.

Add the almonds to a food processor and pulse until finely chopped, 5 or 6 times. Add the basil, oil and 1/2 teaspoon salt. Puree until combined and almost smooth. Pour the pesto into a large bowl. Add the Parmigiano-Reggiano, broccoli rabe and mozzarella and toss well to combine.

Bring a large pot of water to a boil. Season liberally with salt. Add the orecchiette and cook until al dente, about 8 minutes. Using a slotted spoon or a pasta spider, transfer the pasta directly to the bowl with the pesto. Add 1/2 cup of the pasta water and 1/2 teaspoon salt and toss everything together until evenly coated.

Serve warm or at room temperature.

  3. Thinking of Italians through Italian food… My Heart goes for them… They are suffering a lot in this pandemic..
    By the way, there were more than 10 people in that room… If it was in Israel, Italy; the show would be banned since it violated Coronavirus Restrictions.

    As per restrictions issued on March 17 by United States (

    , a group more than 10 people gathering is banned… As per the latest restriction, this video must be banned since it promoting gathering of 10 people or more… Video was uploaded on March 18.. Above all, all are sitting next to each other with no space in between(like 2 feet)… On top of that, they are talking while eating(really bad habit)… So saliva of one person is directly is falling into other person plate… The other person with no qualms is eating the food… Italians , even after suffering huge amount of deaths ; still they are doing the same… I have no idea what to say ..

    This is truly irresponsible and careless from the host and all the friends in the pasta party… It is also shows lack of responsibility, personal hygiene and sloppiness from food network… Even after the government said that personal hygiene and personal space standard should be high in order to combat virus; they upload videos that promote the opposite… This should be considered as real low moment for food network when exhibiting social responsibility, raising social awareness for personal hygiene and food etiquette standards in the light of Coronavirus…

    This is direct act of violation to President Trump orders.. It is almost saying that I don't care and I would do whatever I want… I think french model of fining and shaming people(done in China) or institutions who disobey this, should be implemented in US (as sign of last resort)…
