For those that don't think mozzerella has any business in Mac n' Cheese — try Tillamook medium cheddar, a good gruyere, and dutch gouda in the white sauce, pour it over the noodles in the baking dish, mix, and top with buttered slightly pan toasted plain panko bread crumbs. Cook until top is golden and crisp and sauce is bubbling at edges. To die for.

  2. I love this recipe, my fav part is that I can make small changes and make it my own. When i follow the recipe to the t, I find that no matter how long I cook the butter flour mixture, I end up with a floury flavour/texture at the end. I now make only 1 serving of the sauce for 2 servings of the pasta but double the cheese in the sauce. I also add italian seasoning, and my fav add in is taking some turkey or chicken chunks and frying them in a pan with shallots, italian seasoning, salt and pepper, and then adding it to the mixture instead of pancetta. It's almost like a baked chicken alfredo.

  5. The best mac and cheese ever! For the crispy top I add a little bit of garlic powder along with the olive oil, parm and breadcrumbs and it makes the biggest difference! So delicious, thank you laura this is a staple in my house now and SO easy to make!
