  1. Hi Laura! I really love this recipe and want to try it soon but Iโ€™ve always been told that it is dangerous to put oil and water together and in this case vinegar is diluted with water and the eggplants are then covered in oil… is it safe? Thank you Laura ๐Ÿ˜Š

  2. I just had a crazy inspiration! Watching your lemon monkey bread i was thinking that'd make an awesome desert, but what if you made it savory? Bacon, ham cheese, onions, pepper, salami, pepperoni, olives…. get my drift? Do you think you could make a savory monkey bread laura? I think it'd be great for people who can make it up the night before and throw it in the fridge then pop it in the oven the next morning!

  3. I planted eggplant on a whim and Iโ€™ve been pleasantly surprised with how many have produced! Iโ€™m picking them today, theyโ€™re a small variety like you mention and I had no clue how to prepare -guess I know now!

  6. Thank you for making this. My mother made a version of this dish but used Japanese eggplant and a lot more garlic and vinegar. It was then preserved with olive oil for a month before it was eaten. The absolute best!

Omg eggplant yumm yay delish and really so very healthy too I love eggplant lots I think that was the first vegetable I ate as a baby mashed and till this day I love eggplant anyway from mashed to roasted to fried and especially together with cheese eggplant parmesan with spaghetti marinara what could be better Laura luv thanx so much for sharing I definitely gotta try this sometime kind of reminds me of a side dish that I had Friday night shabbat dinner when I was on birthright Israel please show us a demo of how you make eggplant parmesan and more nonna and Mia too cheers
